Erdbeerkuchen!

Summertime means Strawberry time! Nothing is better when the sun is shining and you can invite some of your German friends for some “Kaffe ind Kuchen” in the afternoon. A lot of German bakeries offer so many yummy cakes but nothing beats a good Erdbeerkuchen ( strawberry cake) If you want to impress them you should make this simple but delicious cake.

For the base you need:

  • 110 Gramm Sugar
  • 120 Gram Flour
  • 3 eggs
  • 40 ml luke warm water
  • pinch of salt
  • 1 Package Vanilla sugar
  • 1 Teaspoon Baking powder

For the topping

  • 1 Package Vanilla Pudding
  • 1 Package Tortenguss
  • Red Strawberries

Mix flour with the baking powder in a bowl and set aside. Now separate the eggs and beat the egg white with a pinch of salt until stiff. Mix Egg yolks with 40 ml luke warm water, sugar and vanilla sugar. Add the flour and baking powder mixture. Stir well. Now fold the egg white carefully in the batter mixture. Fill the batter in a greased springform pan and bake about 15 minutes at 200 degrees Celsius. Mix the pudding mix according to package directions and let cool off . Put a cake shell around the cooled off cake and add the pudding. Now you can add the strawberries. Mix the glaze according to package directions and pour over the strawberries. Let cool in a fridge for about 1 hour.
